Ingredients (12–16 slices)

  • 1 cup almond meal (or oat flour for nut-free option)
  • ½ cup coconut flour
  • 2 scoops Organic Innovation Grass-Fed Whey Protein Isolate (Chocolate, Vanilla, or Salted Caramel)
  • ¼ cup raw cacao powder (skip if using Chocolate flavour)
  • ¼ cup natural nut butter (almond, peanut, or cashew)
  • ⅓ cup pure maple syrup (or honey)
  • ½ cup coconut oil (melted)
  • 2 large free-range eggs (lightly whisked)
  • 1 tsp vanilla extract (optional)
  • Pinch of sea salt
  • Optional toppings: chopped nuts, shredded coconut, or melted dark chocolate drizzle

Method

  1. Prepare your tin: Line a 20x20cm baking tray with baking paper.
  2. Mix dry ingredients: In a large bowl, combine almond meal, coconut flour, protein powder, cacao (if using), and salt.
  3. Whisk wet ingredients: In another bowl, whisk eggs, nut butter, melted coconut oil, maple syrup, and vanilla until smooth.
  4. Combine & mix: Stir wet ingredients into dry until a thick fudge-like batter forms. Add 1–2 tbsp almond milk if needed.
  5. Press & top: Press mixture firmly into the tin. Sprinkle or drizzle your chosen toppings.
  6. Set: Refrigerate for 2 hours (or freeze 45 mins) until firm.
  7. Slice & enjoy: Cut into bars and store in the fridge (up to 1 week) or freezer (up to 1 month).
