Banana Nutella Protein Muffin Recipe

Serves 12 people (makes 12 muffins)

You could wake up in the morning and drink your protein shake as usual — or you could indulge in delicious banana Nutella protein muffins. We love to shake things up (pun intended) and use our Pure Protein Powder Grass Fed Whey Protein Isolate in yummy recipes, so you can enjoy a delicious guilt-free treat whenever you’d like. Here’s how you can turn your protein powder into tasty muffins for breakfast or snack time:

Ingredients

  • Nonstick cooking spray
  • 1 ¼ cup whole-wheat flour
  • 2 scoops (44 g) vanilla protein powder
  • 1 tablespoon ground flaxseeds
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 large eggs
  • 2 ripe bananas, mashed
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup skim milk
  • 1 tablespoon pure vanilla extract
  • ¼ cup Nutella hazelnut chocolate spread
  • ½ cup chopped walnuts

Preparation

  1. Firstly, preheat your oven to 65 Celsius.
  2. Spray a 12-cup standard muffin pan with nonstick cooking spray. We recommend olive oil cooking spray!
  3. Whisk the following ingredients together in a bowl: flour, protein powder, flaxseeds, baking powder, and salt.
  4.  In another bowl, combine eggs, bananas, yogurt, milk, and vanilla.
  5. Mix the wet mixture into the dry combination until it becomes smooth.
  6. Fill the muffin cups halfway.
  7. Place a teaspoon-sized drop of Nutella in each muffin about at this halfway point.
  8. Fill with batter the rest of the way.
  9. Sprinkle walnuts on top before baking for 18-20 minutes, or until a toothpick comes out clean.
  10.  Let muffins cool on a wire rack.

You can enjoy these guilt-free muffins for up to two days if you place them in an airtight container. While we recommend using our vanilla protein powder, feel free to make this recipe your own by choosing salted caramel or chocolate flavours!
