Ingredients (12–16 slices)
- 1 cup almond meal (or oat flour for nut-free option)
- ½ cup coconut flour
- 2 scoops Organic Innovation Grass-Fed Whey Protein Isolate (Chocolate, Vanilla, or Salted Caramel)
- ¼ cup raw cacao powder (skip if using Chocolate flavour)
- ¼ cup natural nut butter (almond, peanut, or cashew)
- ⅓ cup pure maple syrup (or honey)
- ½ cup coconut oil (melted)
- 2 large free-range eggs (lightly whisked)
- 1 tsp vanilla extract (optional)
- Pinch of sea salt
- Optional toppings: chopped nuts, shredded coconut, or melted dark chocolate drizzle
Method
- Prepare your tin: Line a 20x20cm baking tray with baking paper.
- Mix dry ingredients: In a large bowl, combine almond meal, coconut flour, protein powder, cacao (if using), and salt.
- Whisk wet ingredients: In another bowl, whisk eggs, nut butter, melted coconut oil, maple syrup, and vanilla until smooth.
- Combine & mix: Stir wet ingredients into dry until a thick fudge-like batter forms. Add 1–2 tbsp almond milk if needed.
- Press & top: Press mixture firmly into the tin. Sprinkle or drizzle your chosen toppings.
- Set: Refrigerate for 2 hours (or freeze 45 mins) until firm.
